Matthew Dunbar has been with Longrain Melbourne for over 6 years. His deep passion for Thai cuisine and culture never wanes.
He travels there often and has great respect for the Thai chefs in his kitchen. Matt’s background is diverse having studies at the Hotel Sofitel Culinary Academy he then worked at a variety of country restaurants where he made extensive efforts to gain an intimate knowledge of wines.
With Sam Christie and Martin Boetz’s unique interpretation of Thai food and spectacular cocktails. Longrain has had 14 very successful years serving Sydney’s discerning palates, and for the last eight years Melbourne.
Martin is embarking on the next exciting stage of his culinary career with the launch of The Cooks Co-Op. Matt Dunbar will remain as Melbourne’s Head Chef

Martin Boetz, the founding and executive chef at Longrain, Sydney for 14 years (1999-2013) and Longrain Melbourne for over 7 years. Chinese influences within traditional Thai food have driven his individual take on modern Asian food and he is partially responsible for redefining modern Asian cuisine in Australia.
Martin’s food has always been produce driven with much being sourced directly by him from growers at the markets. Having been a major contributor to the success of three high profile restaurants it is now the right time for him to make The Cook’s Co-Op a success in his own right.
The Cooks Coop HQ is located at Sackville, NSW just over an hour from Sydney's CBD.
Here, Martin Boetz has established ‘The Farm' which is the hub of this exciting and fresh agricultural project.
Having being part of the Australian food scene for over 20 years, Martin’s vision of chefs having influence and control over their produce from before seedling right through to the diners experience is now coming to life in this project which focuses on sustainable farming, nurturing and education and promotion of quality chef grade produce.
